Ingredients

  • 100 g 00 flour

  • 1 egg

  • pinch of salt

Directions

  • Put flour on a cutting board or in a bowl. Make a wide hole in the center of the flour with your hands. Scramble the egg with a pinch of salt, then pour egg in the well (the hole you made in your flour).
  • Start bringing the flour from the side to the center, covering the egg. Bring the ingredients together with your hands or a fork to create your dough.
  • Knead your dough by folding it on itself and pushing down. After 10-12 minutes kneading your dough should be smooth and soft. If the dough is sticky add a little flour. Form a ball, wrap with plastic wrap, and let rest for 30 minutes.
  • Spread the dough with a rolling pin. Put some flour on your cutting board to prevent sticking. Spread the dough across the width and length of your cutting board. Try to keep a rectangular shape.
  • When the dough is thin enough, you can cut the shape of your pasta. To cut pappardelle, roll each side of the short end towards the center and cut into strips.
  • Boil water. Toss the pasta in and cook for 3 to 4 minutes.
